Peanut Sauce

My husband & I were in Atlanta recently and we decided to pay a visit to the restaurant we met each other at, R Thomas. One of our favorite dishes there is the Thai Express bowl. It’s a delicious bowl of quinoa, veggies, tempeh, and the real star is this peanut sauce.

but I added carrots honestly, I think mine is the winner.
Here’s what I did-

Ingredients:

1 roasted red bell pepper
1 Tbs lemongrass paste
1 inch piece peeled ginger root
1/3 c shredded carrots
3/4 c tamari soy sauce
1 c peanut butter
Juice from 1 lime
6 Tbs brown Rice syrup
Almost 2 cups water (or less if you like it thicker)
Dash cayenne pepper +\- depending on how spicy you like it

Throw all this into your Vitamix or food processor and process until soupy. I gave mine a taste to see if I wanted anything else and it was perfect!

* this is enough for about 8 servings so you could half the recipe or put it on a ton of stuff- veggie stir fry, salads, veggie burgers, wraps, over rice, etc. I think you could make it warm & throw a couple veggies in for a decadent soup. It is SO good. So we always make a lot.IMG_9590-2.JPG
