A Very Vegan Easter

This Easter we had my mom and brother over. They are not vegan but they often sample my recipes for me and give me feed back. They always enjoy eating when I cook for them and that makes it even more fun to cook! Anyway, this Easter was a very vegan Easter. We had hot cross buns, sugar cookies, lemon cookies, strawberry spring salad, roasted asparagus, potato salad, and hearts of palm risotto. I even fixed some REALLY GOOD morning glory muffins so my mom would have an easy breakfast for her work morning the next day.
