Veggie Pinwheels

I’ve been working on some tester recipes for an upcoming party. Here is one I tried today. These are really easy and quick to prepare- not to mention, very tasty!

Ingredients:
-1 c loosely packed spinach, chopped
-1-2 tablespoons finely chopped onion
-1 roasted red pepper- chopped (I used mine from a jar and squeezed the liquid out a bit).
-1 Tbs veganaise
-1-2 Tbs mozzarella Daiya (vegan) cheese
– dash of pepper, salt, paprika
– 2 Tbs chopped mushrooms (I also used these from a jar)
-1 roll of croissants from the refrigerated section (just check the ingredients)

Directions:
-preheat oven to 350 degrees
-open the croissant package and layout flat- without separating the pieces (if they come apart, just press them back together.)
– mix all the other ingredients together in a bowl then spread out on top of the croissant dough.
– roll longways as if you’re rolling a jelly roll then slice into 12 pieces or slices that are just under an inch thick.
– place flat onto a parchment lined pan and bake for 15-20 mins or until the pastry is golden.
