Pad Thai

Here’s another Katie Bush recipe! I’ve been looking for a great pad thai recipe & how cute is her picture?!!!!

“This is the most amazing pad thai you’ll ever have! It’s so delicious and is a clean eating recipe so it’s great if you’re looking for a good, quick, and detoxifying meal. If you want to take it a step further, you can create your own almond butter by placing almonds in a food processor and processing until the oils break down and the butter is formed.

You’ll need:
Noodles- I highly suggest brown rice noodles or black bean noodles
1 Mango
1 Avocado
Almond Butter
1 Lime
2 Lemons
Tamari, Liquid Aminos, Coconut Aminos, or any soy sauce alternative
1 Yellow Onion
2 Bulbs of Garlic
Coconut Oil
1 tbsp Ginger

Bring some water to a boil and cook the noodles according to the package.

Dice the onion, ginger, and garlic. Heat a pan with some coconut oil and fry the onion, ginger, and garlic until transparent.

To make the sauce, spoon about 3/4 cup of almond butter into a bowl. Add 2 tbsp of your soy sauce alternative and all of the juice from the lime and lemons into the bowl. Add sriracha to taste and mix until the sauce is a little watery. If need be, add more soy sauce alternative and/or lemon/lime juice until you get that texture.

Drain the noodles and add the sauce, stir until the sauce is coated fairly evenly over the noodles.

To create the pad thai bowl, put the noodles on the bottom layer. Add the onion mixture on top and garnish with sliced mango and avocado chunks.
