Open-Faced Sausage Breakfast Sandwich

Mondays can make it hard to get up & get moving- today was that kind of Monday- so we wanted some warm breakfast and not our standard green & fruit smoothie. I asked my husband what he would want and he said a sausage, egg, & cheese biscuit so instead, I made him this version:

Open faced sausage breakfast sandwich! (With mushrooms)

Ingredients:
-vegan English muffin (my favorite is the Ezekiel bread)
– vegan sausage patties browned on pan
– vegan mayo (our favorite is Veganaise)
-vegan cheese (we use Daiya)
– sliced bell peppers
– sautéed mushrooms & onions
– optional toppings might include: spinach, fresh red onion, avocado, or fresh tomato.
– garnish with chopped fresh parsley for added brightness!

Directions:
-toast the muffin.
– layer toppings as desired.
-put under broiler until cheese is slightly melty and edges of bread are toasted.
– serve open-faced with a fork & knife.
