Georgia Peach Shortbread Squares

These are some easy & delicious vegan cookie bars. Pull out your butter, flour, & jam and get ready to make a delicious southern treat!

Ingredients:
-smear of vegan/non-hydrogenated shortening or vegan butter for greasing the pan
-2 c all purpose flour
-1/2 c granulated sugar
-1/4 tsp salt
-1 c cold vegan butter
-1 c peach preserves
-6 Tbs + raspberry jam
-1/4 c quick cook oats
-1/2 c sliced almonds (I used a sliced/slivered almond combination)
-top with powder sugar (optional- I didn’t use any)

Directions:
-prepare a large glass dish with shortening
-preheat oven to 350 degrees
-combine flour, salt & butter in a bowl & cut with a pastry blender until crumbly. (Keep 1 cup of this mixture to the side, to top bars with.)
-press flour mixture into the bottom of the dish to create a cookie crust
-bake at 350 for 25-30 minutes or until golden
-remove from oven and spread peach preserves over the top then dollop the raspberry preserves on top of that.
-sprinkle with the cup of flour you set aside
-sprinkle with almonds & oats too
– put back in to 350 degree oven and bake 30-40 minutes or until the top and sides start to turn golden brown.
– remove from oven and cool for at least an hour.
– cut into squares, garnish with powder sugar if you like and enjoy the delicious taste of these sweet, Georgia inspired shortbread bars!
