Chickpea salad sandwich

This chickpea salad sandwich is so quick and easy to make. It is delicious and will satisfy any craving you have for a salad sandwich. You can also smush the chickpeas a little and serve with crackers, chips, or veggies as a dip.

Ingredients:
-1 or 2 avocados ripe enough to smash
– 1 can drained and rinsed chickpeas
– S & P
– Paprika

Optional ingredients:
-cilantro
– turmeric
– mustard
– shredded or grated carrot
-chopped, roasted bell peppers

Directions:
– in a bowl, smash the peas a little bit with a fork or your hand.
– put in the avocado, spices, and any additional ingredients to your liking
– mix with a fork until combined.
The chickpeas should still have texture & shape.

Serve on bread, or in a pita with your favorite sandwich toppings or with crackers and veggies as a dip.
