Waffles with Walnuts

I made these yummy waffles for my husband, Tom, on Valentine’s day this year. They were delicious so I made another batch for my friend Katie.

Ingredients:

4 1/2 tsp ener-g egg replacer + 6 Tbs warm water mixed with fork- until thick
3 Tbs coconut butter (melted)
3 Tbs earth balance (melted)
1 1/2 c almond milk (you could swap this out for the leftover coconut milk – the translucent liquid from the can of coconut milk uses to make the whipped cream topping.)
1 3/4 c unbleached all purpose flour
1 Tbs baking powder
1 Tbs sugar
1 Tbs cinnamon
Pinch salt

Directions:

Make the coconut cream first: take can of coconut milk out of the fridge and spoon off the hard& white coconut (save the translucent liquid for another recipe). Mix on high in a counter top mixer or use handheld mixer until stiff peaks form in the coconut. (If you like, add a tsp vanilla and 3 Tbs powder sugar & 1 tsp cinnamon while mixing.)
Set aside.

Next, start on the berries:
Put fresh or frozen blue berries into a small sauce pan with 2 Tbs granulated sugar/agave/or maple syrup to sweeten. Heat on med-low, stirring occasionally until the waffles are done. (You may need to turn the heat to low or off if too much liquid from the berries is cooking off. You want them to be a little saucy.)

To make the waffles:
Mix all wet ingredients in a bowl.
Mix all the dry ingredients in a separate, larger bowl. Make a well in the center then pour in the wet ingredients.
Mix well.
Pour by 1/2 c onto preheated waffle iron.

* to keep the waffles warm, put onto a pan in the warm oven. As each waffle comes off the iron, drop onto the pan in the oven.

When waffles are done, top with earth balance butter, berries& chopped bananas, coconut cream, maple syrup & chopped walnuts.
(The waffles are delicious with just syrup or peanut butter on them too.)

For a yummy breakfast on the go, spread peanut butter onto a waffle, add thinly slices apples, bananas, or strawberries and fold in half.

-These waffles may be frozen after they are cooked. Just thaw and toast in the toaster when ready to eat.
