Vegetable Soup

This is a delicious vegetable soup. Really, you can throw in any veggies you have on hand but for those of you that like to look at a recipe or need something to start with- here you go!

Ingredients: 2 Tbs olive oil, 1 c onion, 2 c leeks, 1 c celery, 2-3Tbs garlic, 3-5 chopped carrots, 2 cans peeled- chopped tomatoes, I ear of corn (cut off cob) or 1/4 c corn or 1 can corn, 1 c frozen peas, 1 can chick peas, 1 can red kidney beans, 1/4 c quinoa, 1-2 c cut green beans, 1/2 c thinly chopped kale, 6 c water, 2 veggie bouillon cubes, s&p to taste, tony checherres seasoning, 1/3 c whole raw cashews, 2 bay leaves

(I basically throw in whatever I already have +\- some of the veggies I listed above.)

Directions:
-Sauté onions, leeks, garlic & celery in olive oil in a large stock pot.
-Once softened and translucent add the tomatoes& stir. Then add all your other ingredients.
– let simmer for at least 1-2 hours.
(I normally cook this for 3 hrs on simmer.)

This soup tastes great the next day! Also, my husband and I can eat for a week on this soup! We enjoy it often.
