We started noshing on this before I took a picture. It was delicious. On this version of a snacking cheese tray I have:
-store bought vegan cashew cheese with herbs, seasoned tiny potatoes, roasted & sliced portobello mushroom, phyllo wrapped asparagus, grapes, strawberries, seed crackers, vegan pepperoni, and a creamy horseradish dip (made with capers, vegan mayo, seed mustard, turmeric, horseradish and some salt and pepper)
Super easy to throw together, especially if you can use the store bought cheese & crackers.
This would be great for a party or as an appetizer tray.
