Tom’s Goulash

My sweet husband fixed up a big pot of pasta for us to eat for a couple of days. I have to say- this was VERY good! Try it out sometime. I think this is a pretty kid friendly dish & good for pot lucks too…
Here we go!

Ingredients:
– 1 lb box macaroni elbows
– 1 Tbs truffle oil ( you can use less – or a different cooking oil too)
– 5 cloves garlic minced
– 1 whole onion diced
– 1 green bell pepper diced
– 1 box white mushrooms
– 1 box (1 lb) vegan meat crumbles
– 1 can kidney beans
– 2 cans tomato sauce
– 2 cans diced tomatoes
– 2 cans corn drained
– salt & pepper to taste
– 1/2 Tbs cumin
-1 Tbs paprika (Hungarian or smoked)

Directions:
– Heat oil in pot then put all the diced veggies in. Cook until soft and translucent.
– Add the meat crumbles, beans, & corn, and then cook for 5 minutes on medium high.
– Add the tomatoes and stir spices in.
– Cook for another 10 minutes on medium low.
– Serve on top of macaroni pasta.
