Taco Salad

With Cinco de Mayo coming up, everyone is looking forward to chomping down on some Mexican style food. Before you go filling your face with fried chimichangas and cheesy quesadillas, you should try out this more healthy alternative!
Go ahead and have some chips and salsa and beer with lime or a margarita while you are throwing this salad together!

Use whatever you like but this is what I threw in for this salad:

Ingredients:
– lettuce
– shredded carrots
– shredded purple cabbage
( I found a bag mix with the first 3 ingredients)
– chopped broccoli
– sliced tiny bell peppers
– fresh red onion
– black beans (I used my homemade ones)
– “meaty chili” it’s the nacho papa’s bean chili recipe but I did not use beans I put carrots and mushrooms in instead.
-corn (I found a can of corn that also has red and green bell peppers in it.)
-salsa
– jalapeños
– sliced black olives
-avocado diced
– fresh tomatoes
– lime juice
– S & P to taste

* you can use oil and vinegar if you like but I find the lime juice to be enough.

– you can also serve this salad with vegan sour cream and tortilla chips!
