Strawberry Pudding Pie Delight

I’ve been on a pudding kick lately (more pudding recipes coming soon!) and I made this strawberry one last weekend. This is perfect for a quick breakfast or a healthy dessert. Dates are the perfect sweetener for this dessert but you could always add some turbanado sugar or agave for a really sweet kick.

Ingredients:
Crust-
-1 c raw almonds
-6 dates, pits removed
-1/2tsp vanilla extract

Filling-
-1/3 c uncooked oatmeal
-2 Tbs flax meal
-1-2 packages fresh strawberries cut into pieces (reserve a few slices of strawberries to garnish the top of the pudding.)
-2 cups frozen strawberries (if you have only one package of fresh strawberries.)
-2 ripe bananas
-juice from 1/2 a lemon
– 5-6 dates (pit removed) soaked in warm water for 30 mins-1 hour.
(I used medjool dates)

Directions:
– pulse the almonds in a food processor until they are crushed into tiny pieces
-add the dates and process until fully combined with the almonds
– add the vanilla and process a little more
– use ramekins or a dish to put the pie in (I used a dish but would recommend single serve cups or ramekins so it doesn’t run out of shape in the dish)
– add the crust mixture to dish or ramekins and press down to firm at the bottom.
-set aside and prepare the filling:
– in a blender or vitamix blend the oats and flax until very fine.
– put the bananas, soaked dates, lemon juice, and package of strawberries or the frozen strawberries.
– blend in the vitamix until creamy and combined.
-throw in cut up strawberries (still reserving some slices for garnish) and stir- do not blend, then pour or spoon over the prepared crusts.
– top with sliced strawberries and extra crumbles from any leftover crust you might have.
– put in the fridge until ready to eat.
