Rosemary Vegetable Quinoa Salad

This is a delicious side dish! Add whatever veggies you want. Here’s how I made this batch:

Ingredients:
1 c quinoa
2 c water
1/2 chopped red bell pepper
1/2 c defrosted peas
1 can rinsed & drained corn (or defrosted or fresh corn kernels)
1/2 c chopped red onion

For the dressing:
1 Tbs Apple cider vinegar
1 1/2 Tsp Dijon mustard
3 Tbs water
1 tsp chopped fresh rosemary
2 Tbs fresh lemon juice
*1 tsp agave (optional)

Salt & pepper

Directions:
-Cook quinoa in water according to package directions.
-Meanwhile, chop & prep all the veggies and mix together the dressing ingredients in a separate bowl.
-when the quinoa is done, transfer to a large bowl, add veggies, and dressing and toss. Season with salt & pepper if desired.
– serve as a side dish, toss with baby greens, or make a delicious thai express with this instead of rice. This would also be great in a nice bowl of soup.
