Lettuce Wrap Lentil Tacos

My husband & I had this for dinner last night & it was SO GOOD!!! My friend Sarah even showed up later to get her hands on these lettuce wrap tacos!

Ingredients:
-1tsp olive oil (optional)
– 1/2 large onion chopped
– 1 whole bell pepper chopped (I used all colors and did the equivalent of about 1/3 c)
-1/4c shredded carrots (these are optional)
-2 cups veggie stock (+ more if needed)
-1 can diced tomatoes (juice too)
-1 c dry lentils (I used the red ones)
-1-4 Tbs taco seasoning (it just depends on how seasoned you want the lentils- also, you should make your own Mexican seasoning to avoid all the sodium in the store bought kinds)
-lettuce leaves (romain or iceburg)

Toppings: (all are optional)
– chopped tomato
– sliced avocado
– black beans
-onions
– fresh bell pepper
-fresh chopped cilantro
-salsa
– paprika

Directions:
– sauté the peppers, onion and carrots (in olive oil ) in a sauce pan until softened.
– add the lentils and stir
– pour in the tomatoes and stir
– pour in 2 c veggie stock and stir
– add seasoning and stir
– bring to a simmer and cover for 40 mins or so, stirring occasionally. Add more stock if needed and cook longer if needed. The lentils should begin to split a little and the liquid should mostly be absorbed.
– In the mean time, heat up some black beans & prep all your veggies.
– serve everything on a lettuce leaf like a taco.
