Home Fries

Potatoes are one of my favorite foods. I like them fixed pretty much every way and these home fries are no exception.

These are easy and delicious. They taste good wrapped up with some cole slaw in a burrito, as main dish for breakfast, as a side with sandwiches or for dinner, etc, etc…

Ingredients:
-1 Tbs (or less) olive oil
-4 potatoes washed, peeled, and diced
-1 c (or around there) variety of chopped bell peppers (I use red, yellow, and green)
-1 1/2c sliced mushrooms
-Seasoning to taste: Tony Chachere’s, paprika, S & P
-Some chopped up fresh parsley would be yummy throw in when these are done cooking too!

Directions:
-heat oil in a large skillet then add all the ingredients.
-cover and cook on medium heat for 15 minutes, storing occasionally.
– cook an additional 15 mins on medium high heat, uncovered, and stirring more frequently. Do this until the potatoes are tender on the inside and browned on the outside.
