Fiesta Dip

Here’s a good recipe for a layered dip. I know I put up a lot of bean recipes but I like them and I fix them often. This one is great for a party or Cinco de Mayo which is coming up soon.

Ingredients:
1 can refried beans
1 Tbs Mexican seasoning
2-3 Tbs prepared salsa
1/4 c almond milk (unsweetened)- or you could omit this but it just makes the beans easier to pour & spread.
2 soft avocados
2 Tbs chopped cilantro
1/4 c finely chopped onion
Some diced jalapeño (to taste)
1 chopped tomato
4-5 sliced mushrooms
1 small can drained and sliced black olives

Directions:
– preheat oven to 350 degrees
-heat refried beans, with the seasoning, almond milk, and salsa. Combine completely- set aside.
-in a baking dish mash the avocados and stir in the cilantro (add S & P to taste if desired) flatten out in dish.
– sprinkle the diced onions and jalapeño
-pour the beans over and spread to the edges.
– sprinkle the mushroom slices, tomatoes, and olives over the top and sprinkle with pepper.
– bake in the oven for 20-30 mins just until the tomatoes and mushrooms soften.
– serve with chips!
