Decadent Biscotti

I absolutely love biscotti. There isn’t any morning treat that is better (in my opinion)! This is a really great recipe that is a bit more decadent than traditional biscotti. You should really try this one!

Ingredients:
1/3c almond milk
1/3 c coconut milk
4 Tbs ground flax seed
1 c raw sugar
1 tsp salt
1/2 c canola oil
2 tsp vanilla extract
2 tsp almond extract
2 1/3 c all purpose flour
4 Tbs corn starch
4 tsp baking powder
2 c chopped raw almonds
1/2- 1 bag dark chocolate chips

Directions:
– whisk the flax and milk together until it becomes thick
– add sugar, salt, oil, and extracts- mix well
-sift in flour, cornstarch, baking powder & mix until almost combined.
– add 1 2/3 c chopped almonds – knead with hands briefly, just until combined.
– transfer dough to parchment lined baking sheet and shape into a long flat log- (you may need to make 2 or 3 of these depending on what size you want your biscotti.)
– bake 30 mins or until color is turning golden brown
– cool for 30 mins
– chop log into strips – about 3/4 inch thick
– place back on parchment and bake 7-10 mins flip and repeat 7-10 mins (just until both sides are slightly brown and looking crunchy.)
– allow to cool
– use dark chocolate and melt by 15 second intervals, stirring in between each set- until melted.
– use a knife to spread onto one side of the biscotti and top with remainder of the chopped almonds. ( I did one at a time: spread chocolate, sprinkle with almonds, set aside & repeat with the rest.)

Serve with your coffee or tea, bag & give as a gift, or eat as a sweet & crunchy treat.
