Cooked Kale Greens

These greens are sure to give you great fortune (and health) starting the new year. Be sure to eat your greens year round, and not just for your New Years dinner!!!

Ingredients:
-1 tsp olive oil
– 1/3 c chopped onion
– 1 Tbs chopped garlic
– 1/3 c shredded carrots
– one bunch organic kale greens- washed and torn into smaller pieces
– 1/2 veggie bouillon cube
– 1/2 c water
– s & p to taste
– cayenne pepper or hot sauce to taste

Directions:
– sauté the onion, carrots & garlic in a large pan with the oil for 2 mins.
-add the kale and sauté 2-3 mins more
– add the water, veggie bullion, and other seasoning
( go easy on the salt and spicy seasoning- you can adjust this once its been cooking for a little while and you have a chance to taste the flavors.)
-sauté and let the water cook down a little bit until the kale leaves and carrots are tender (20-30 mins on med heat).

Enjoy as a side dish, with black-eyed peas, corn bread, in wraps, etc.
