Applesauce pancakes

These are delicious and moist vegan applesauce pancakes.
You can sub different milks and flours for these but this is how I made mine:
(Serves around 6)

Ingredients:
-2 c almond milk (I used almond eggnog once & it was good)
-1 c spelt flour
-1 c garbanzo bean flour
-2 Tbs apple cider vinegar
-1 tsp vanilla extract
-2 Tbs baking powder
-2-3 Tbs sugar
-1/2 tsp salt
-2 Tbs melted wart balance (butter or oil of sorts…)
-1 tsp cinnamon
-2/3 c unsweetened applesauce

*the garbanzo flour makes the texture real eggy & crepe like. It’s good!

Directions:
– put dry ingredients in a bowl and stir together.
-put all the wet ingredients together then pour in with the dry and stir just until everything is wet then let sit for a few minutes so the batter can rise.
-heat up the frying pan & when it’s nice and hot, spray with oil. (Don’t have it too hot though or they’ll burn, have the stove set around medium and just be sure the pan is hot first.)
-pour onto the pan a couple at a time (depending on pan size) and allow the batter to start bubbling before you flip to the other side.

I like to heat the oven and put my finished pancakes in there while I’m cooking the rest. Serve with maple syrup and fresh fruit.IMG_6628.JPG
